Sous Chef

Description:The Sous Chef will directly assist the Executive Chef with the coordination of food preparation and dining service staff. The Sous Chef will ensure that The Country Club at Soboba Springs kitchen staff are working within the parameters of the menu and preparation guidelines as provided by the Executive Chef. The Sous Chef will provide input for menu creation and ensure kitchen staff is trained on consistent preparation of all menu items. The Sous Chef will act in place of the Executive Chef when applicable.
Duties:Assists in planning meals and developing menus, advises on pricing and implements food preparation training of the food preparation staff

Advises on quality standards

Supervises and supports department staff

Ensures kitchen staff is properly operating,
handling and cleaning all equipment, utensils and machinery
Works directly with Executive Chef in supervision of all kitchen personnel

Provides training in safety, lifting and carrying, hazardous material handling and first aid

Implements schedules for equipment cleaning, stock rotations, and other such measures

Ensures compliance with health department and other governmental and institutional requirements and regulations
Requisitions food and supplies from store rooms, maintains and controls related inventories

Supervises and assists in ordering and receiving of products

Qualifications:Degree from post secondary culinary arts training program is preferred

Skillful at meal planning and preparation

Familiarity with restaurant, hotel or club kitchen management and procedures is necessary as is knowledge of elementary cost accounting, inventory and purchase order systems and procedures
Accustomed to exercising supervisory responsibilities
Physical stamina is necessary for lifting cooking and preparation items and standing for several hours at a time
Must have a valid driverís license and proper health and food handling credentials
Must complete a pre-employment drug screen

High School Diploma or equivalent

2 year culinary degree or 3 year work related experience
